We set out to create the most flavorful wheated bourbon we could, drawing on our distillers’ backgrounds in brewing to approach the recipe from a different perspective. The mashbill might look more like a beer recipe than a traditional whiskey recipe, built around a selection of exceptionally high-quality wheat and malted grains that our team knows well from their brewing days. These grains are common in brewing, but rarely used in whiskey, giving us an opportunity to bring flavors and techniques we’ve spent years working with into the spirit. We also chose traditionally floor-malted grains, a labor-intensive method of germinating grain that we believe delivers a deeper, more robust flavor. Dark wheat was added to bring balance and a richer, more roasty character, along with malty sweetness and notes of toffee and caramel. Every grain was chosen with flavor in mind, resulting in a very flavorful wheat whiskey with layers of character that set it apart from what you typically find in the category.

Palate:

Bright and lively, with brown sugar, custard and a subtle baking spice. Toasted pecan and cinnamon roll bring a rich, bready sweetness, followed by a gentle wood-driven spice and light yeasty note.

Nose:

Bright lemon zest and fresh-squeezed orange lead the way, alongside orange blossom honey and warm lemon pound cake. Hints of fresh linen and soft wheat give way to bready sweetness, with subtle oak, pecan and a touch of cherry plum underneath.

Finish:

Bright with soft vanilla and honey lingering on the palate, like vanilla buttercream drizzled with honey. Lemon citrus remains on the tip of the tongue as nutty oak and a lightly roasty character emerge.
