1/2 oz Peach Mint Syrup

1 Add ingredients to a shaker and shake very well.

2 Strain over crushed ice and garnish with fresh mint.

Peach Mint Syrup

2 cups sugar

1 cup peach juice

1 bunch blanched mint leaves

To blanche the mint dip fresh mint in boiling water for 10–15 seconds, then plunge into ice water. Set aside to dry. Then, in a small pot, heat sugar and peach juice over medium-low, stirring until sugar dissolves. Cool completely. Blend cooled syrup with the blanched mint, strain through a fine mesh strainer, and store in an airtight container in the fridge for up to 1 month.
