Grapefruit Shrub

5 cups Sugar

10 Grapefruits (peeled)

5 cups Grapefruit Juice

2.5 cups Apple Cider Vinegar

Measure out 5 cups of sugar and place in a container with an airtight lid. Wash 10 grapefruit and pat dry. Peel grapefruit and mix peels in with measured out sugar. You want to mix the peels in throughly until the consistency of the sugar is like wet sand. Place lid on and set in fridge for 24 hours. Juice grapefruit and place in fridge untl ready for use. After 24 hours use a spatula to transfer sugar/peel mixture into large pot. Add juice to pot and turn on the heat to medium low. Stir the mixture with a slotted spoon until all the sugar has dissolved. Turn off the heat and allow mixture to cool. Strain out the peels, and once mixture has cooled add vinegar, stir well. Store in an airtight container in the fridge for up to two months.
