Bourbon Panna Cotta with Spiced Peaches

Bourbon Panna Cotta with Spiced Peaches
Serves 6

Chill time: 6 hours to overnight
Ingredients:
- ¼ cup bourbon
- 1 envelope (2 teaspoons) unflavored gelatin
- 1 cup whole milk
- 1 cup heavy cream
- 2 teaspoons vanilla extract
- 1/2 cup sugar
- 1 cup creme fraiche or sour cream
- 3 peaches, pitted, peeled and sliced (can use frozen)
- 3 tablespoons brown sugar, or to taste
- ½ teaspoon cinnamon
- 1 tablespoon bourbon, or to taste
Mix:
- Place 6 martini or wine glasses on a tray; set aside.
- Pour bourbon into small bowl; sprinkle gelatin over. Let stand until gelatin softens, about 10 minutes
- In a heavy saucepan combine milk, cream and vanilla extract. Bring to a simmer.
- Stir gelatin mixture into milk mixture. Stir in sugar. Cook and stir over low heat just until sugar and gelatin dissolve, about 2 minutes. Remove from heat. Whisk in crème fraîche or sour cream.
- Divide among glasses. Cover; chill until set, at least 6 hours or overnight.
- Toss peaches with brown sugar, cinnamon and bourbon. Let stand at room temperature for 30 minutes. Top each panna cotta with peaches. Serve.
